Holy Guacamole

Since college, I’ve come to love guacamole (guac). Every once in a while I’ll get some with my burritos, or order a meal with it at a restaurant.

One day I decided I wanted to try making my own at home, I thought, maybe it’ll be cheap and easy. So I looked up recipes online. I tried one and although it was relatively simple, it called for a lot of ingredients. I did it all and it was good, but I wondered if I could make it simpler. I did.

Although my recipe is bare bones if you just want a snack and you have these 2 ingredients on hand you have a wonderful mix that will keep you from having to make a trip to the store or having to spend more time making it. So without further ado.

Glader Guac

Gather

  • One ripe, mostly soft, avocado. I leave avocados out on the counter if I plan on making guac, but be careful with this they’ll usually ripen quite quickly when left out.
  • Approximately 2 heaping tablespoons of normal salsa, but I never measure this out anymore personally, preferably chilled.

Go

  • Grab a cutting board and a steak knife (or one slightly larger could work as well) cut the avocado in half lengthwise then make slices both directions through the fruit. Scoop each side out onto your cutting board, dice and mash with your knife. (Optional: If you have a mortar and pestle my theory is that this would probably work better, but alas I do not own one at this point.)
  • Once the avocado is as creamy as you’d like (a few small chunks is okay) scrape it into a pile. Grab your favorite salsa and scoop said amount unto the pile and fold in, mixing it after a few folds, with your knife or a spoon.

Yield: Approximately one serving

This recipe is meant to be as simple as it gets. If you have more or better tools I’d suggest using them. My point is to illustrate a way that guac can be made with very few resources and time.
